De-lish Recipes

Sweet Potatoes
4 yams
Couple shakes...Cinnamon
Couple shakes...Pumpkin Pie Spice (it actually says that on the package)
1/2 stick butter/vegan butter
2 tbs Raw sugar
One Shake Nutmeg
small Marshmallows (optional)


Boil yams till fork soft...very soft...
remove skins
add next 5 ingredients
blend with mixer till smooth
if you want to then put in small containers to eat for breakfast or as a snack, that that OR
smooth into 9x9 pan and cover with small marshmallows and broil marshmallows till golden, not burnt!


Banana Pizza
Take a tortilla, spread PB, cover with sliced banana. Cut into pizza slices.  
Emersyn will eat this for breakfast, lunch or dinner...so easy and not bad.

Grilled Veggies
Any veggie you want.  I like to use zucchini or squash (or both), a quartered red onion (my favorite!).
Marinate all in My Favorite Marinade (see below) and grill on med/high.  Grill till tender.


Easy Banana Wrap
1 whole wheat tortilla
Natural Peanut Butter
1 Banana


Slice the banana or leave it whole (I prefer it sliced), spread a thin layer of PB on the tortilla and sprinkle the banana down the center of the tortilla. Roll the tortilla up...Easy and De-lish breakfast or lunch!


My Favorite Marinade (or salad dressing!)
50% olive oil
25% balsamic vinegar
10% water
15% maple syrup
4-5 shakes of Trader Joe's "21 Season Salute" ALL natural!


Mix in a bottle that you would use for salad dressing. I use this on everything as a marinade for meat, to veggies to salads. It makes everything taste amazing. 


Maple Syrup Salmon
I don't eat salmon myself but I have. 
This is easy and De-lish!

Desired amount of fresh not farmed Salmon
maple syrup
butter, (vegan or regular)

Place pats of butter on the salmon and pour the maple syrup on the salmon. Place in the refrigerator for as long as overnight. 
I like to bring ANY meat to room temperature before placing it on heat.  Give it about 10-15 minutes to warm.
Grill salmon on a heated pan for 6 minutes on each side. It is great when it gets crispy edges from the butter. The maple syrup gives it the most wonderful coating and sweet flavor.

Blueberry Oatmeal Pancakes
I like to mix this up a bit. Honestly you can put anything in a pancake, ask my mom, but I use blueberries.

Your favorite pancake mix and the ingredients to make them
1 cup old fashion Quaker Oats
1/2 cup blueberries, blackberries, rasberries (or whatever you pick!)
1/4 flax seed meal
couple shakes of Nutritional Yeast (No flavor, just added B-vitamins)

If you choose bananas, you could also add a tablespoon of natural peanut putter-YUM!

Mix it all up and cook on a skillet making sure to only turn them once so the pancakes don't get tough.

My sister-in-law, Chris called me the other day OBSESSED about cake balls so I found a recipe, but Google it, there are hundreds of amazing recipes out there and these seem really easy and De-lish!!


1  (18.25-ounce) boxed cake mix plus ingredients called for on box

1  (16-ounce) can prepared frosting
Almond Bark Coating or Confectionery Wafer Coating (both recipes follow)

Strawberry cake balls with chocolate coating

Bake the cake according to package instructions. While warm, crumble the cake into a bowl with a hand mixer to a fine texture. Mix in frosting to make a paste, using 3/4 to a full can of frosting, according to taste. Chill the mixture for at least 2 hours.

Using a melon baller or your hands, form the mixture into 1 ½ -inch balls. Place the balls on wax paper; freeze at least 6 hours.

Working in small batches, remove the balls from the freezer and dip the balls into warm, melted Almond Bark Coating or Confectionery Wafer Coating, using toothpicks or forks to manipulate the balls. Remove the balls. Place the balls on wax paper to harden.

Makes about 30 cake balls.



Grilled PBandJ Desserts
2 slices of your favorite soft bread (crust on or off, it's up to you!)
Natural Peanut Butter
Your favorite jelly, banana slices, honey or Nutella
butter or vegan butter
sugar and cinnamon mixed and on a plate


Make a PB&J (or the substitute spread) as you normally would. Spread the outside of the sandwich with a light coating of the buttery spread. Grill on a pan (think grilled cheese!)  When the sandwich is all toasty and De-lish, coat both sides in the sugar and cinnamon mixture! Cut in 1/4 or enjoy the whole darn thing...hey, you know you want to!


On The Grill Potatoes
We do this all the time. It is great if you want everything cooked on the grill!
1 baking potato, per person, cut in about 8 cubes
1/2 package of mushrooms, quartered (if desired)
1/2 onion sliced
5 garlic cloves sliced
salt and peper to taste
olive oil to drizzle


Heat the grill to med/high.  Use 2 sheets of Aluminum foil about 2 feet long and place one on top of the other.  On the long side, fold the sheets over about 1/2 an inch 3x so that when you open the sheets, the foil is now one large sheet.  Spread the potatoes out on the foil, cover with onions, garlic, mushrooms, salt and pepper.  Drizzle with the olive oil.  Close the aluminum foil into a pouch around the food so it is sealed and can be turned on the grill.  Hint: The flatter the pouch, the faster it will cook. It takes about 25 minutes to cook, so plan accordingly! De-lish easy potatoes on the grill. No pan, no mess! 




Garlic Mushrooms
I use this as a main dish for me and a side dish for everyone else. You can put it on steak or over rice. So easy to make and good for you


1 package white mushrooms
1 package baby Portabella mushrooms
Note: add any type of mushrooms you love. The more the merrier! Sometimes I add Shitake mushrooms or try a new kind I see at the store.
1 white onion, halved and then sliced
5 garlic cloves sliced (add some whole cloves if you love garlic like I do)
3 Tbs olive oil
A splash of red wine, optional
Salt and pepper to taste


Heat oil in a large skillet, add onions and garlic and let the onions get almost translucent.  When you cut the mushrooms, look at them from the top down and cut them in 1/4 like a pie, this way they are meaty and not sliced.  Heat till all the mushrooms are cooked but not soggy. Add salt and pepper to taste. 




2 Baked Beans 
De-lish, fast and easy. I got this recipe from my mom, She had me stir and I watched her make it and have done it "her way" every since.


1 large can vegetarian baked beans
1 can black beans (rinsed)
1/2 white onion, chopped
3 squirts ketchup (no corn syrup!)
3 squirts favorite mustard
2-3 Tbs maple syrup or raw sugar


Cook the baked beans, add the black beans and onions, squirt on the ketchup and mustard and add the syrup (or sugar). Cook till the flavors are married but not so long so the beans are mushy. An easy 10 minute side dish.




Easy Cold Veggie Wraps
(I lived on these at the shore last summer!!)

  • 1 whole wheat tortilla (check for high fructose corn  syrup! They actually use that stuff in these?!)
  • 1 salad (I love peppers, onions, lettuce, mushrooms, anything!)
  • hummus (to taste)

Open wrap, spread hummus, add salad, roll.  I like to then put mine in aluminum foil if I am taking it somewhere, it keeps everything in place. Easy and De-lish!


Perfect Protein Oatmeal
(makes 1 serving)


1 cup water
1 cup Quaker Oatmeal (not quick Oates)
3 shakes Nutritional Yeast (whole food B Vitamins)
1 Tbs natural peanut butter
Dark Maple Syrup (to taste)
Ground Flax seed meal (if desired)


Boil the water, add the Quaker Oatmeal, stir till desired consistency.  Pour in bowl. Add syrup, peanut butter and Nutritional Yeast. Sprinkle with flax. De-lish!


Hot Baby Spinach 
(makes about 2 servings and takes only minutes)
1 1/2 Tbs oil
2 shakes of pepper flakes (hot as desired)
1-2 garlic cloves (as desired)
1 bag baby spinach


Heat the oil in at least a 12 inch pan over med/high heat. Add the pepper flakes and garlic.  Add the bag of baby spinach. Turn till the spinach is covered with the oils and spices, warm and wilted.
A ton of greens and garlic. Perfect for lunch or a side dish.
